When There's No Hodgepodge, You Wing It

Gosh, but I hate these days when the regularly scheduled, no-brainer post can't be done, but everyone deserves a holiday and Joyce @ From This Side of the Pond is no exception.  She creates and hosts the Wednesday Hodgepodge week after week and does a great job.

So......what to write about today?

My Bible study group met last night and I guess it's proof that we are growing. We had at least 4 people missing due to vacations, college visits, and other commitments.  Not so long ago that would have meant we'd have cancelled out of wanting the majority of the group to get the benefits of what we were discussing.  Last night we still filled the tables and enjoyed great discussion.

I got an added boost from class last night...more than one person noticed I was losing weight.  Yes!!!  It's starting to show!  My hubby even mentioned it the other day.

As for today, I have to run to the store at some point to pick up a few things that my hubby left hints about...like the empty milk jug on the counter.  I also need to deal with more zucchini.  I think I'm going to make pineapple/blueberry/zucchini bread.  YUM!

Pineapple-Blue Berry-Zucchini Bread

3 eggs.
3 cups flour
2 cups sugar.
1 tsp. Baking soda
1 cup oil.
1 tsp. Salt
2 tsp. Vanilla.
1 tsp. Baking soda
1 cup drained, crushed pineapple
2 cups grated zucchini
1-2 cups blueberries (to your liking)

Mix all ingredients.

Bake at 350° for 1 hour. Makes 2 loaves. Freezes well also.

Tonight I'm meeting up with a few "girls" from high school at Rizzo's, a local Italian place for dinner and to hear another classmate...a guy we all crushed on back in the day...play his music.  Should be a fun time!

Hope you all have a blessed day!

    1. You and the zucchini are safe for another day. When I went to pick up the items we were out of I decided to get a pedicure and the guy talked me into a manicure, too. Not enough time left to bake.

  2. I'm looking forward to seeing some of my 'old' classmates at the end of this month. Always fun. Let us know how the performance goes!! Congrats on the weight loss...I am pledging to lose 50 pounds by January.

    1. The performance was great. Our classmate is very talented and he played all the music we grew up with from the 60s, 70s, and 80s. We all decided we are getting old, however, because when the music was going on we couldn't hear each other to talk.

Good luck with the weight loss...I'm sure you can do it!
